Jalapeños Fresh from the Garden

Easy Peasy Bacon Wrapped Stuffed Jalapeños


I'm a simple cooker. I hate the cleanup so I use as little dishes as I can.

Here's what you will need:

-20 Jalapeños

- 1 block of Cream Cheese

-A slab of Bacon {don't be stingy, get the good stuff}

-1 cup of Mexican Cheese

Just from experience I will tell you to use plastic gloves when working with the jalapeños. Otherwise, your nail beds will burn for days. I've even worn my snowboarding goggles before... I'm a pansy.

1. Cut all of the Jalapeños lengthwise with a sharp knife. 

2. Scoop the seeds out completely for a mild batch or keep a few in for a round house kick to the mouth.

3. Rinse them good.

4. On to the stuffing!

Since I don't like getting the food processor out {because I'm lazy}

I thaw the cream cheese in the microwave for 30 seconds then I throw in a handful of Mexican cheese and stir.

5. Set stuffing aside and cut the slab of bacon right down the middle where you have two halves.

7. Wrap a 13x9 pan in foil and grab some toothpicks. This is where we make our assembly line.

8. Spoon a dollop of cream cheese/cheese mixture on a jalapeño.

9. Take a slice of bacon from one of the halves. Tightly wrap it around and pierce it with a toothpick.

Make sure to be kind to your vegan friends...

On to the Jack Daniel's Marinade! Mix the following:

1/4 cup Ketchup

1 tsp. Vinegar

Couple of dashes of Liquid Smoke

1tsp. Worstershire

1  TB of Brown Sugar

1 to 2 tsp. of Jack

1/2 tsp. of Garlic

Salt-N-Pepa

You could use your favorite BBQ Sauce instead, I just prefer to make my own.

10. Baste your jalapeños.

11. Throw them in the oven at 400' for 45 minutes and BAM you're done!
